Operakällaren is proud to present an extensive and engaging environmental program which has now been awarded by the Nordic Ecolabel. The eco cycle is a common concern and we are determined to an active part in protecting the nature and raise the level of environmental competence among our staff members and our partners. A Swan-labelled restaurant has taken measures to ensure all aspects of the restaurant are environmentally friendly. It fulfils strict requirements on which raw materials are purchased and used. Swan-labelled restaurants fulfill requirements regarding energy consumption and waste management as well as the use of chemical products. Swan-labelled restaurants also use a proportion of organic foodstuffs and have a clear environmental management system. This means that a restaurant has rules and procedures for which products may be purchased, has established goals to continually improve environmental performance, and makes sure members of staff are involved in the environmental measures.
